Heating the oil (like that) kills or changes the health benefits of the oil. So - yes - I use a non stick pan - I put a tiny bit of spray in the bottom if it is something that is likely to stick - otherwise I just leave it dry. Sometimes I put oil and food in a bag and shake it (like shrimp) other times I put veggies in pan - heat and stir for a while and then add the measured olive oil near the end of the cooking.
