when adding it to the veggies - I can usually add so that it doesn't end up in the pan - it ends up coating the veggies (that is why I wait until near the end).

I don't know if I have this exactly right - but on Oprah - Dr Oz said that most people dump the oil (Olive Oil) in the pan, heat it and then add whatever they are cooking. Heating the oil (like that) kills or changes the health benefits of the oil. So - yes - I use a non stick pan - I put a tiny bit of spray in the bottom if it is something that is likely to stick - otherwise I just leave it dry. Sometimes I put oil and food in a bag and shake it (like shrimp) other times I put veggies in pan - heat and stir for a while and then add the measured olive oil near the end of the cooking.
